Recipe – Spicy Stuffed Peppers

I would love to share with you all one of my favorite recipes that Robert and I make; it is our healthy take on stuffed peppers! It has plenty of protein, veggies, and carbohydrates so it is a perfect post-run dinner. It is also embarrassingly easy, which makes it that much more awesome!

The recipe below is for two people, but you can easily multiply the ingredients for 3+ people.

*1/2 Pound Extra Lean Ground Turkey (We use Jennie-O)
*1 Red Bell Pepper (Half a pepper for each person will help stretch your dollar a little more!)
*1/4 Cup Franks RedHot Buffalo Sauce (I love this sauce because it is delicious and it has ZERO calories – please note that you can add less/more of this depending on how spicy you want it to be)
*1/4 Cup Shredded Cheese (We use extra sharp cheddar because it has a great taste with the buffalo sauce and ground turkey)
*1 Bag Quick Cooking Brown Rice
*Garlic Salt and Pepper to taste


1. Pre-heat the oven to 375 degrees.
2. Cook the ground turkey (add garlic salt and pepper to taste) and brown rice as the directions indicate on their packaging.
3. Shred the cheese.
4. Cut pepper in half vertically.
5. Mix the brown rice, ground turkey, and buffalo sauce in a bowl.

6. Put both pepper halves in a greased oven-safe pan and add the mixture to the openings in the peppers (the entire mixture may not fit in the peppers so you can save any extra to serve after the they are done baking).

7. Top with cheese and put in the oven for about 25 minutes.
8. Eat and enjoy!
